5 or 6 medium pears
1/2 cup brown sugar
1/2 teaspoon cinnamon
2 tablespons chopped crystallized ginger
1/4 cup orange juice
2 tablesoons lemon juice
1 1/2 treaspoons cornstarch
Peel pears, leave ends attached. Stand pears upright in a slow cooker. If necessary, trim bases so they can stand upright.
In a small bowl, mix the ingredients and then poor over pears.
Dot the pears with butter.
Cook on low until they are tender (5 to 6 hours)
Lift out pears and staad in shallow bowl.
Spoon sauce over pears and garnish with whipped cream.
Voila!

Buffalo Chips
2/3 cup real butter
1 1/4 cup brown sugar
3/4 cup white sugar
3 beaten eggs
1 1/2cup chunky peanut butter
6 cups old fashioned oats
2 tsp baking soda
1 1/2 cups raisins
1 1/2 cups chocolate chips
Set oven at 350 deg, put all the ingredients in a large bowl and stir until thoroughly mixed. Spread the mixture onto a cookie sheet evenly and bake for 15 minutes.
I found when I had help making it this is even good when you forget the sugar lol for those who are truly trying to avoid sugar lol the peanut butter and raisins give it a good flavor but we still prefer it WITH the sugar lol
Comment by Allison Gygi on January 13, 2011 at 10:43am Sorry it's been so long since I've posted. I started a new job a couple months ago and it's really keeping me busy. Even though Christmas is over, I wanted to share one of my favorite Christmas recipes.
Potato Casserole
8 medium potatoes
1 pint sour cream
1/2 c butter (margarine works too)
1/4-1/2 c evaporated milk
salt to taste
2 c grated cheddar cheese
Topping:
1 1/2 c cornflakes, coarsely crushed
1/2 cup butter
Boil potatoes in their skins for 15 minutes. Drain and cool. When cool, peel potatoes and grate.
In large saucepan, combine sour cream, 1/2 c buter, evaporated milk and salt. Warm; do not boil. Add grated potatoes and cheese; mix well. (Add more evaporated milk if too pasty.) Put into 9x13 baking dish.
Preheat oven to 375* F
Melt 1/2 cup butter or margarine in small saucepan or in small bowl in microwave. Stir in crushed cornflakes until thoroughly coated. Spread over potatoes. Back uncovered for 30 minutes.
